Oven temperature conversion: °C, °F, fan and gas mark

Convert oven temperatures between Celsius, Fahrenheit, fan (convection) ovens and gas marks – from very low to very hot, with what each temperature is used for.

Quick answer

180 °C is 350 °F, gas mark 4 – or 160 °C in a fan oven. 200 °C is 400 °F, gas mark 6 (180 °C fan).

Recipes from the US give oven temperatures in Fahrenheit, British recipes often in gas marks, and European ones in Celsius – sometimes for a fan oven, sometimes not. A fan (convection) oven cooks hotter, so set it about 20 °C lower than a conventional oven.

Find the temperature from your recipe in any column and read across.

Fahrenheit values are rounded to the nearest 5 °F, as on oven dials. Oven thermostats vary: an oven thermometer shows the real temperature.

Tips for converting oven temperatures

  1. Check whether the recipe was written for a fan (convection) or conventional oven.
  2. For a fan oven, use the fan column – about 20 °C (25 °F) lower.
  3. Gas mark 4 (180 °C / 350 °F) is the most common baking temperature for cakes and cookies.
  4. Check a little before the end of the baking time the first time you convert a recipe.
